The St Arnaud process has been developed by the Field family at their organic olive grove near St Arnaud in Victoria. The process preserves the crisp texture and presents a fresh flavoursome green olive with the flesh coming away from the pit cleanly.

Crisp texture and with creamy flavours of broad beans and cashews with a hint of tannin.
Product: Green Kalamata
Process: St Arnaud
A classic olive which is crisp with well-balanced flavours of green capsicum, slight tingling chilli and a hint of bitterness.
Product: Correggiolo Mix
Process: Natural fermentation
Firm texture and with dark chocolate flavours, slight bitterness and pepper with a shiraz-like tannic finish.
